Makes 1 serving
3 oz. spinach, coarsely chopped
3 oz. cauliflower flowerets, in bite size pieces
3 oz. avocado cut into bite size pieces
3 oz. marinated artichoke hearts, cut into bite
sized pieces
1 ½ oz. peanuts, chopped
1 ½ oz. shallots, chopped
1 ½ tbsp. sunflower oil
¼ tsp. oregano
¼ tsp. sage
½ tsp. salt
¼ to ½ cup diced tomatoes
1 hard-boiled egg sliced optional
½ cup Nu-World Amaranth Snackers- French
onion
optional: add bacon
Combine all ingredients and mix well.
