Diet Types: gluten free, casein free
Makes 6 to 8 servings
1 cup Lentils
2 cups Nu-World Foods Whole Grain Amaranth
2 cups water (enough to cover amaranth and beans)
1 medium onion – chopped
1 medium green bell pepper – chopped
1 cup celery – chopped
1 cup carrot – chopped
2 cloves garlic – crushed
2 cups chicken stock
1 chive – chopped
Place Lentils into soup pot and cover with fresh
water. Bring to a boil for 5 minutes. Reduce heat
to a simmer and add chopped vegetables (onion,
peppers, celery, carrot & garlic). Cook for
30 minutes. Add chicken stock and simmer until
vegetables are tender. Remove from heat and serve
warm with chopped fresh chives. |
