Diet Types: gluten free, casein free
Makes 4 servings
2 cups Nu-World Foods Puffed Amaranth
½ cup Toasted Nu-World Foods Amaranth Bran
flour
4 egg whites
4 egg yolks
6 tablespoons honey
1 teaspoon vanilla extract
With wire beater, whip egg whites until stiff
and set aside. Blend egg yolks, honey, vanilla,
Nu-World Foods Puffed Amaranth and Toasted Nu-World
Foods Amaranth Bran flour until well dispersed.
Fold in egg whites carefully. Pour batter into
9"x 9" baking pan or cake pan.
Bake at 350 F for 12 minutes. Turn oven down
to 325 F and bake for 20 minutes longer. Cool
for 10 minutes. Serve warm or cold. This is best
served with a fruit or vegetable sauce.
