Makes 24 cookies
1 cup Nu-World Foods Amaranth Flour
2 cups Nu-World Foods Puffed Amaranth
1 tsp baking powder
2 egg whites - whipped
½ cup honey
1 tsp almond extract
2 tbsp melted butter
½ cup raisins - chopped
Combine Nu-World Foods Amaranth Flour, Nu-World
Foods Puffed Amaranth and baking powder. Separately,
beat egg whites until fluffy and add in honey,
almond extract and butter. Continue beating until
smooth and fluffy. Combine dry mixture with the
fluffy egg blend. Stir in raisins. Measure dough
by tablespoon full and drop onto lightly oiled
baking sheet. Bake at 350 F for 12-15 minutes
or until golden.
