Makes an excellent side dish with poultry, beef,
or pork
Diet Types: gluten free, casein free, vegetarian
Makes 4 servings
2 tbsp canola oil
¼ cup diced onion
1 clove garlic – crushed
10 oz. sliced mushrooms
3 cups Nu-World Foods Puffed Amaranth
10 oz. chicken broth from can or consommé
1-cup water
¼ tsp black pepper
¼ cup parsley – minced
Heat oil in a frying pan over medium heat. Add
and sauté onion, garlic and mushrooms until
onions are tender and golden. Add broth, water
and pepper and bring to a boil. Add Nu-World Foods
Puffed Amaranth while stirring. Remove from heat
and cover for 5 minutes. Fluff with fork and garnish
with fresh minced parsley. |
