Makes 1 loaf
1/2 cup dates, chopped
1/4 cup figs
1/2 cup Nu-World Foods Amaranth flour
1 cup boiling water
2 egg whites
1/4 cup margarine
1/4 cup pineapple tidbits
2 cups whole wheat flour
2 teaspoons baking powder
1/2 cup walnuts, chopped
1/2 cup pecans, chopped
1 teaspoon vanilla extract
Soak dates, figs and Nu-World Foods Amaranth
in boiling water. Beat eggs well, add honey and
margarine. Beat well. Stir in all remaining ingredients
and mix well. Pour into an oiled loaf pan. Bake
at 350° F for 1 hour and 15 minutes. |
